usually i just open bake my sourdough bread. this is how i do it. i preheat my electric oven with temp. 250 C for 20 minutes prior minimum. as i start adding water about 20 ml in the little glass under oven tray, and put a pan or pyrex. my pan so tight with the volume of my dough, but i can't help it since my pyrex just still occupied with banana cake in the fridge. after 20 minutes of preheat, i put my dough inside the oven with one little ice cube. the water and ice cube make the compartment moist and the crust of the dough is still soft for 20 minutes. the softness of the crust make the gas (CO2) inside the dough expand. After 20 minutes i take the ice cube off the oven and bake the dough for 20 minutes later with temp 240 C. i turn the oven off at 40 minutes from the start of baking and rest the bread in the oven for next 3 minutes. i pull the bread off the oven and let it cool for 1 hour minimum prior of slicing
